About all Sevens Brewing
Located in the heart of West Asheville, All Sevens Brewing was established in 2018 as the brainchild of Westville Pub with a philosophy of keeping it simple and consistent. We serve our ales straight from the brite tanks, providing the freshest beer in town.
Operating out of the newly expanded space in Westville Pub, we’re proud of our friendly, neighborhood scene where no one is a stranger and everyone is welcome.
Our Team
Dirk Hillegass, Head Brewer
Dirk Hillegass was born and raised in southern Pennsylvania. After receiving an Associates of Applied Science Degree from Allegany College of Maryland he continued his education in biological studies, successfully completing his B.A. at WVU in Forestry and Wildlife Fisheries. After moving to the Asheville area, he quickly became involved in the field of fermentation science. A biologist at heart, he worked with Dr. Caldwell at Carolina Heritage Winery and Vineyard. He served as a long standing Brewer for Highland, and is now currently Head Brewer at All Sevens Brewing Company.
